The Sweet Truth About Food Safety: Temperature Matters
India is entering its festive season, and soon our homes and sweet shops will be overflowing with milk-based delicacies—burfi, peda, rasmalai, kalakand, milk cake and many more.
Food safety is rightly receiving increasing attention, with FSSAI taking strong steps across the country to create awareness about hygiene, adulteration and safe food practices. Through its growing presence and awareness campaigns across social media, consumers are becoming more conscious about what they eat and how food is prepared.
But there is one silent and often overlooked factor: TEMPERATURE.
A sweet may be prepared with the best ingredients in a hygienic kitchen, yet if it is kept at the wrong temperature for too long, microorganisms can multiply and the food can become unsafe—sometimes without any visible change in appearance, smell or taste.
This is particularly important for milk and high-moisture dairy products.
Food safety therefore doesn't end when cooking ends. The temperature journey matters—from preparation and cooling to storage, transportation, display and serving.
For food businesses, understanding temperature sensitivity is critical. Choosing the right refrigeration and food-preservation equipment is therefore an equally important food-safety decision.
This festive season, consumers should ask not only “Is it fresh?” but also “How has it been stored?”
